I have always loved deviled eggs. They are so good. And I've always lamented the fact that they tend to be only for Thanksgiving and Christmas. Yet, I never made them myself - which, knowing what I know now, there was no excuse for.
And then when I saw this pin on Pinterest, I realized what had to be done.
Easter or not, it was time to finally make my own darned eggs.
Except for the part about how I was given the task to make them as good as the Mister's mom's deviled eggs. But he had no idea what she put in them and, well, as I haven't failed at them yet, I'm not going to ask yet - I'm stubborn that way.
So, instead, I found this recipe for "Southern Style" deviled eggs - which, really, just had the largest amount of ingredients in it. Honestly, that seemed more realistic to me - and it meant I got to use onion and garlic, which we all know I love!
I did my grocery shopping and honestly could not wait. So, these were made on Monday. And we totally ate them for lunch.
But more on that in a minute!
One thing I will readily admit, though - I have never been good at boiling eggs. So I only tried six. If they failed, well, I had more to try again with.
I set the timer after they started to boil for ten minutes (which is what I think my mom always used to do, but I don't remember!).
And then the timer went off, and it was, well, a rolling boil. Which reminded me that, yes, eggs needed a rolling boil, not a just-starting-to-boil like just about everything else can use to cook.
Darnit.
So then I consulted the Mister, who assured me that you cannot overcook the eggs and leaving them in longer would be alright- and if they get to that point, they will explode. I don't know if that's true or not, but it sounded right, so I believed him and let them cook for a few minutes more.
I left out the relish from the recipe. Out of all the deviled eggs I have ever eaten, I do not remember the taste of relish in any of them, though a lot of the recipes I had seen about suggested using it. I figured I would go without, and instead pack mine with all this stuff.
Also, what does one use paprika for other than deviled eggs? I mean, I could easily make these all the time now to use up all that spice, but if there's anything else it could go in, that'd be alright I guess!
In with my not-so-great-at-egg-boiling, means I'm not so great at egg peeling either.
You'll notice I lost an egg. I salvaged the yolk bit, but the white bit just tore apart. And yes, quite a few are rather sad looking.
Sad looking food is my thing though, remember?
Again, it looks funny, right?
No really, you can say it!
And even more so at this point, I didn't follow the recipe. I took the idea of how much stuff to add, but I didn't measure. Anything.
And it worked out great.
I'm a fan of add stuff until it tastes good, so that's what I did.
It did end up a bit too mustardy, but that's alright. Less mustard next time. And there will be a next time!
I also thought of being fancy and putting the goop in a ziploc and cutting the corner off to try and make them pretty.
And then realized what that would mean - a lot of work.
So I spooned the goop in the egg halves and called it good.
And yeah, this was our lunch.
And it was perfect.
No seriously!
The Mister didn't say they were as good as his mom's, but he did say that I was allowed to make them again - which means, to me, that they are at least somewhat comparable to what he is used to.
I will say, though, that I am not a fan of the bacon hits. Or at least them being mixed in. It's a random crunch that just seems off to me. The Mister liked that part, though, as he thought it "broke up the texture" of the egg bits. I think I will leave them as a topper next time.
He also said that I managed to almost entirely cover up the taste of egg. Which is a weird comment, while eating something that is, well, egg plus condiments.
Results?

And super sad that I didn't make more! The beauty of it, though, is that they were only as difficult as boiling and peeling eggs - which I can get better at!
Seriously. What took me so long to do this?!
