So I'm glad to have this to share with you this week, because it really is fabulous.
So, we love nachos. Like, ridiculously so.
And I love my crockpot. It is an awesome device.
And I'm coming around to soup. I'm not quite to the point of all-the-soup-all-the-time, but getting close.
This recipe, well, is a culmination of all three of these things.
I do feel that it was cheating a bit, as most of the ingredients are just buy from store and add to pan or crockpot, but with as fantastic as it turned out, I will not be complaining!
One of the last recipes I made required only half an onion...so I chopped up the rest of it and shoved it in the freezer.
And then tried to use it for this recipe. I don't think I would recommend doing this unless you have really lean beef, as there was a lot of extra liquid while this was all cooking, but that's alright - it was either drained out or boiled off.
Also, I only used about 2/3 of a pound of beef. A whole pound seemed excessive - as well as expensive! Using less was actually quite alright, and neither of us missed the extra!
I also skipped the garlic, and added powdered garlic instead.
I don't know how much garlic costs, but if I can guess by the cost of the powdered stuff, it's not that cheap. I would rather make use of what I have on hand, as often as I can, than try and buy extra stuff.
This is what I mean about everything being ready made, just pop in the crockpot.
Also, I had no idea there even was such a thing as "Fiesta Nacho Cheese" soup! The recipe didn't call for the "fiesta" variety, but there wasn't any other nacho cheese soup on the shelf, so I figured it would do just fine.
I hold my stance that if it looks a bit weird, it will taste good. I do not know how that's a thing, but it is. The color is, actually, pretty spot on in this picture. And it looks quite gross, doesn't it? But, in reality, it was amazing.
I added Monterrey cheese, instead of cheddar. I cannot recall the last time I had cheddar cheese in the house, but it's been at least two years, I'm guessing! I just do not like the stuff any more, and I will always replace it for what I prefer. So far, no matter what I've made, I haven't missed the taste of cheddar!
I let the cheese melt, and then stirred it in, and did not add any more as the recipe suggested. Neither did I really measure...just "shred shred shred, that's not enough, shred shred shred, okay that's good." It seems to work!
And of course we had to add tortilla chips.
We actually had to have the bag of chips by our desks (in lieu of a dinner table!) so that we could add more as we went on with eating, because the chips just added a fabulous salty crunch.
I'm actually glad the recipe didn't call for salt, because we added plenty of it with the chips!
There was no real tinkering with this recipe, no additions or subtractions.
And I don't even have anything that I would change now after having eaten it.
It was that good.
So much so that there wasn't leftovers. Well, maybe a little for lunch the next day. But certainly not enough to have for another dinner.
The recipe claims to feed 4-6, but I don't believe that at all. Okay, well I guess I could. We have bad self-control over here...and we like our delicious soups...so yeah we both had seconds. But our bowls are small!
Either way, if you like nachos...and if you like soup...this is for you. I highly recommend this one - and am looking forward to make it again soon!

P.S. I am really in need of some new dishes. I never feel quite happy with how things look in these flowery numbers!
