What We've Eaten - A Meal Plan in Reverse [No. 2]

February is over, yay! Maybe Spring will start soon and it won't be so dark and dreary and ew. Sure, we've had some sun the past few weeks, but it's either cold, windy, or just on the cusp of rain. So, not that enjoyable.
Either way, that's not why we are here. We're here to discuss the jillion things we ate in February. And this time, I actually have the whole month to talk about.

And so, from the beginning!

Leftovers - (from the meatballs and pasta we had had)
Jambalaya - that I won't make again. It's basically the same as the Mexican Rice recipe I had found, but with the addition of broth and kielbasa sausage. Also I read the recipe and didn't realize that there is a big difference between white rice and long-grain rice...so we ended up with wayyyyy too much.
Leftovers - because we had a ton of rice, and it needed to get eaten.
Burritos - the refried bean and ground beef or turkey variety.
Nachos - oh man, are they delicious. Chili plus shredded cheese plus cream cheese. It's amazing. I highly recommend it, if you don't mind, well, eating something that's so "bad" for you.
Farmer Burgers - which are a weird thing to think about, but they are pretty dang good. Simple, but good. I used Kroger crescent rolls, as they seemed to make the most sense, but don't taste like anything but, well, bready deliciousness.
Baked potatoes w/ chili - The potatoes weren't 100% done properly, but seeing as I'd never made them before, it turned out alright.

Biscuits & Gravy - I have, in my lifetime, made this from scratch. I no longer do that. For two people, the work isn't worth it. So I just buy biscuit rolls, and I buy gravy mix. I use milk in the gravy mix, and I add cooked sausage to it without draining any liquid from the pan, to make it tastier. Not as good as from scratch, but so much more time-efficient.
Leftovers - gravy is never as good the second day, but we make do.
Macaroni & Cheese- the delicious kind, from a box.
Hummus & Vegetables & Tortillas - we had went to the store and purchased hummus...how was it not going to be for dinner.
Breakfast Burritos - egg and cheese and tator tots wrapped in a tortilla.
McDonalds - family things meant that the Mister was out of the house for most of the day, and then after that we had other things to do as well, so we ate hamburgers in the car. Adults can make that decision, right?
Potato Soup - always delicious. But I made too much. When you have enough potatoes for the recipe to work, but you have two whole potatoes left over, do not add those in. You will be swimming in soup. It's not pretty.

Leftovers - swimming in soup, anyone?
Nachos - still delicious.
Mexican Rice Burritos - also still delicious. And, sometimes, makes a ton.
Leftovers - this time, it made a ton.
Salad - the Mister very kindly made us spinach salads for dinner. And now I know that I do not like radishes. Ew.
Carl's Jr - there is no good excuse for this one, we just really wanted hamburgers. Did you know they have hamburgers (again) with blue cheese on them? So amazing.
Taco Soup - this one was new, and I will say that it was different. Not my favorite soup (I originally thought I would not like corn in my soup...and I was correct). But the Mister liked it. It may come up again, if canned goods are on super sale again, but won't be something I reach for all the time.

Leftovers - too much soup, guys. Just too much.
Enchamac - where you add enchilada sauce to macaroni and cheese, and call it something else, so maybe the Mister won't notice you just want noodles.
Breakfast Burritos - tortillas were on major sale at some point in February. I wish we hadn't of went through all of them already, though.
Domino's - my resolve was broken. I asked the Mister to cook, and he said "order pizza" and I said "cook" and he said "order pizza" and he won.
Leftovers - any day I don't have to cook is a good day.
Farmer Burgers - these really are great. And with my style of cooking (or lack thereof), it's literally ground meat, that is seasoned, and shredded cheese inside. Then, dip in whatever you want (I prefer mayo and ketchup mixed together, so it really is like a hamburger).
Macaroni and cheese - see, we ate noodles twice in one week, but they were different, right? No, they aren't different, but different enough that the Mister cannot complain!

Mexican Rice Burritos - seriously, this stuff is so good.

And that's all of February.
Also, yes, I take advantage of any meal that I can cook once, eat twice from. I highly recommend that course of action.

  1. I always enjoy these! We often do hummus/tabouli/veggies/crackers for dinner and I love the idea of baked potatoes for dinner - economical and healthy! Thanks for the inspiration :)

    1. Hummus for dinner is an awesome thing! It's "healthy" enough to not feel bad for powering through a container in an evening, ha! Baked potatoes for dinner was one of those "we'll try it and see" meals, but considering it was covered in cheese and chili, it was filling enough!
